It starts with the humble Sandwich...

Preparing great food on a boat can be easier than you think. Each month we'll be trying out recipes from cooks and crew that are easy to prepare and taste great.

Before we get started let's talk about bread and basics...

For the perfect "first to last bite" the bread should be perfect. Our favourites are Italian Ciabatta, Sourdough (which keeps well), Flatbreads for wraps and Classic stone-baked Baguettes. If you have an oven on-board you can bring "older" bread back to life by splashing it with water then warming it through for a few minutes. Mayo and French Mustard make any sandwich rich in taste and flavour and are a must for any galley, and butter at room temperature is not only easier to spread, you use less...! 


Feeling hungry..? Well we'd better get started...


French Pan Bagnat. Easy to prepare by layering Cos lettuce, sliced Vine Tomotoes and Green Peppers on the base of a crusty French roll. Add flaked Tuna then top with finely diced Spring Onions, Black Pitted Olives and torn Basil Leaves. A pinch of Sea Salt and a drizzle of Olive Oil make this classic sandwich pop..!

Roast Chicken & Advocado. One of our favourites especially in a crusted Ciabatta. Tear some pre-cooked Chicken into strips, mix with a good dollop of Mayonnaise and dont be afraid to pack it into the Ciabatta. Sprinkle Sea Salt over the filling and a generous helping of Black Pepper before adding thin slices of advocado. It's a messy one to eat but worth it..!

Hummus, Olives and Sumac on Flatbread. This one couldn't be easier as you simply spread a generous amount of Hummus over the whole Flatbread then place pitted Black Olives (we recommend Kalamata) on top. Sprinkle a small amount of Sumac (a spice available in most supermarkets which has a subtle lemon flavour) over the top along with a drizzle of Olive Oil, and you have a perfect light lunch or snack in moments.

Smoked Salmon, Cream Cheese & Dill. Great with Sourdough or a Seeded Bagel, this is a delicate sandwich packed full of flavour. Smear a light coating of French Mustard on the bread before before spreading cream cheese thickly over each slice. Add a dusting of Smoked Paprika before the Smoked Salmon then top with torn sprigs of Dill.

Curried Chicken. We think this works well in a Petite Ficelle (small baguette). Tear strips of pre-cooked Chicken and mix with Mayonnaise, Greek Yoghurt and Curry Powder to taste. Spread Mango Chutney over one side of the sliced baguette then add a generous amount of the filling. Top with mixed salad leaves or thinly Sliced Apple (in place of the Chutney) and you have a sandwich which has been a Super Yacht favourite for years.

Crayfish & Rocket. Perfect for any type of bread, especially wholemeal. The trick here is not to pair the Crayfish with a generic Sea-Food sauce. Crayfish tails mixed with equal parts of Greek Yoghurt and Mayonnaise form the majority of the filling and are best seasoned with Paprika, a dash of Lemon Juice and a generous amount of Black Pepper. Rocket leaves are "peppery" so they work perfectly as a complementing filling. 

Steak, Mixed Leaves, Cheese & Aioli. You'll need a hob and there's some washing up, but after one bite you'll be coming back for more. Minute or Skirt Steak is perfect for this sandwich. Coat the bread with Aoili before seasoning the steak with Salt and Pepper and flash frying. Cut the steak into thin strips and sprinkle over shavings of Parmesan Cheese. Place the Steak Slices on a bed of Mixed Leaves in the sandwich and sprinkle with Sea Salt. Delicious....

Tuna, Red Onion, Green Pepper, Cucumber & Lemon Mayonnaise. Great with a soft Italian Seeded Roll. Mix flaked Tuna with diced Red Onion, diced Green Pepper, Mayonnaise and freshly squeezed Lemon Juice. Layer the base of the sandwich with slices of Cucumber and top with the filling. For extra kick a finely chopped Red Chilli or Jalapenos hit the mark. 

Prawn, Chilli, Lime and Crispy Lettuce. We like this one in sliced Sourdough as the texture compliments the Crispy Lettuce. Mix pre-cooked Prawns with finely chopped Red Chilli and a little Mayonnaise (not too much), then add a generous squeeze of fresh Lime Juice. Freshly chopped Coriander enhances the freshness of this filling and we'd recommend using Baby Gem Lettuce, as it gives a nice crunch. Season to taste and you have a fresh, light sandwich to enjoy.

Chicken with Spring Onions, Chilli & Greek Yoghurt. This works well in any Wholemeal or Brown Bread. Mix pre-cooked Chicken (torn into strips) with thinly sliced Spring Onions, finely chopped Red Chilli, Greek Yoghurt and a whole, crushed Clove of Garlic. Add a dash of Lemon Juice and for extra crunch you could try adding chopped Cucumber to the filling.


So with minimum effort, you've created a lunch to impress your guests..!
